Thanksgiving leftover ideas!

This is just a quick little post with some ideas/recipes for using those Thanksgiving leftovers! 

The most obvious/used one (in my opinion):Sandwiches:
I like to use turkey, gravy, stuffing and cranberry sauce. We often eat the mashed potatoes separately because they make the sandwich really heavy

Fajitas:
Literally the same as sandwiches but in wraps. For these, Jon often puts the mashed potatoes in with everything else. I still like them separate

If you have Brie (or cheddar or any other cheese hanging around), then use some turkey and cranberry sauce to make a turkey cranberry grilled cheese!

Buffalo turkey pull apart bread (recipe video circulating somewhere on Facebook):
Shred up the leftover turkey
Combine about 2 cups of poultry with about a cup of hot sauce and about 1/2 cup or cup of shredded cheese
Dump in some green onions/scallions
Use easy roll-out pizza dough (or leftover pie crust) and cut it up into squares (8-16 pieces depending on what you are working with). Buy a rectangular one if you can.
Brush the pieces with oil and grease a bread pan with oil
Put a glop of the chicken mix on each square, and add cheese to the top.
Stack the pieces on top of each other and turn the stack sideways to put it into the bread pan. (I find that it's easier to do 2 pieces at a time)
Bake at 350F (177C) for 40 minutes or so

Leftover turkey can also be used for: buffalo turkey dip, BBQ or buffalo chicken pizzas, or buffalo/BBQ chicken Mac n cheese.

Use stuffing to make waffles. Top with mashed potatoes, gravy, turkey, squash, or cranberry sauce (or any desired combination of those!)

Thanksgiving-inspired 'shepherd's pie'
Depending on what leftovers you have, you could do this a variety of ways. If you just are looking to get rid of a bunch of mashed potatoes, then you can make a regular shepherd's pie and use the mashed potatoes for the top
If you are looking to use up turkey as well, then you can make a type of red meat sauce using shredded turkey instead of ground meat. 
Shepherd's pie is usually a red meat sauce (browned ground meat and tomato sauce) with veggies (often peas and carrots). SO you could also mix leftover veggies in to the sauce.
You could also do turkey and gravy for the bottom part and stuffing on top instead of mashed potatoes (I would recommend topping the whole thing with some cranberry sauce once it has cooked)

Turkey pot pie (Turkey, veggies, mashed potatoes or pie crust)

Leftover veggies can also be made into soups, or casseroles, or chopped up and mixed into omelettes or quiches

And remember, there are plenty of hungry people in the world so you could also heat up a single portion of a full thanksgiving meal, put it in a Tupperware you don't mind giving away and drive to your nearest city and give a hot thanksgiving meal to someone who is asking for food or money.
